If you skip your breakfast and opt for a cup of coffee or a slice of leftover pizza then this recipe is for you! When we are busy we tend to neglect our mind and body health and one common way to do that is by skipping breakfast. That’s why I have put together this healthy Instant pot breakfast that will help jump-start your day both physically and mentally. Here’s what you need:

The best part about this recipe is you can make it with what you have. If you have an onion, great toss it in! If you have bell peppers that are on their last leg, chop ’em up! Vegetarian? Substitute the sausage for black beans. Dairy Free? Remove the cheese. Don’t worry about straying from the above recipe, just make it with what works for you, and I bet it will turn out.

First, How breakfast can jumpstart your day

Our bodies NEED food to function. That’s a fact. But if we eat lunch and dinner is that enough? NO! Camille Styles goes into more detail on how breakfast can jumpstart your day. But here are 2 ways breakfast impacts our mental functionality on top of our physical health:

Ingredients

  1. 6-10 Eggs
  2. 3-4 Potatoes
  3. 1/2-1 Onion
  4. 1/2 lb sausage
  5. 1 head of Broccoli
  6. 1/2 cup Cheese
  7. Salt, Pepper, + seasoning of choice
  8. 1.5 cups cold water

Instructions

For those who are just learning the Instant Pot ways (like I am) follow this detailed list on how to cook in the Instant Pot to avoid a mishap.

    1. Chop onion
    2. Add sausage & Onion to Instapot on Saute setting
      Cook until browned
      • Remove from the Instapot
      • Turn Instapot “OFF”
    3. Add 1.5 cups of cold water to the Instant Pot
      • Scrape pieces on the bottom of the pot. ***SUPER IMPORTANT
      • Put the trivet inside the pot when ALL the bottom is clean

    4. Greece your baking dish
    5. Chopp (or shred) potatoes
      • If you are using frozen potatoes that’s ok just pull them out of the freezer

    6. Add potatoes to greased baking dish
    7. Add sauteed sausage and onion on top of the potatoes
    8. Chop Broccoli
    9. Whisk eggs
      • If you have more veggies you might want to add more eggs
      • Add salt, pepper, and additional seasonings (I like chili powder)
    10. Add broccoli (and other veggies) to the egg mix
      If it is too ‘thick’ add milk or an extra egg. YOu want the mix to be able to cover your potatoes and sausage.
    11. Add your cheese to the top and cover with foil.
      • I didn’t have foil and that’s ok!

Instant pot cooking

Cooking in an Instant pot can be difficult so don’t stress if your potatoes are hard the first time or you get the dreaded “Food Burn” warning. Once you get the hang of it, the Instant Pot can become a staple in your home especially when you are busy or only have a few kitchen utensils.

Cooking Instructions

If you are new to Instapot cooking, this part is important to follow!

    1. Put the above casserole on the trivet in the pot
    2. Cook on High Pressure for 25 minutes
      • If using fresh or thicker potatoes cook for longer (27-30 minutes)
    3. Let the pressure release manually for 10 minutes
      Don’t touch anything after the timer goes off
    4. Quick release
    5. Serve
