According to Time Magazine, Skiing is a “Ridiculously Good Workout” and a good workout means you need to feed yourself well! That’s why this ski season I have crafted the perfect meal that allows me to prep, mix, ski, and eat. Chili is a winter go-to for most households but THIS Healthy Turkey Chili to Warm up after Skiing on the cold slopes has the kick you need to warm up from the inside-out. My inspiration is from the infamous Ambitious Kitchen “Seriously the Best Healthy Turkey Chili” recipe.

Healthy Turkey Chili to Warm up after Skiing

Ingredients

  • Olive oil
  • 1 yellow onion
  • 3 garlic cloves (or a little more)
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 pound extra lean ground turkey (99%)
  • 1(15 oz) can diced tomatoes
  • 1(15 oz) whole tomatoes
  • 1 1/4 cups chicken broth
  • 1(15 oz) can kidney beans
  • 1(15 oz) can Black beans
  • 1(15 oz) can sweet cornSPICES:
  • Chili powder
  • Ground cumin
  • Cayenne pepper
  • Curry Powder
  • SaltFor topping: cheese, Jalapenos

Cooking Instructions

  1. Chop onion, peppers, and garlic
  2. Heat Oil in Instapot on Saute setting
  3. Add the above to Instapot 
    Cook for 5ish minutes
  4. Add Ground Turkey to the Instapot
    Cook until no longer pink.
  5. While cooking, make your Chicken Broth (Or use premade)
  6. Add Seasonings
    This is a spicy mix! If you don’t like spice, don’t add as much cayenne, or red pepper flakes) 
    • 4+ tablespoons chili powder (I used the extra spicy mix)
    • 2 teaspoons ground cumin
    • 1 teaspoon curry powder
    • 1/2+ teaspoon cayenne pepper
    • 1/2 teaspoon salt
    • 1 tablespoon Red Pepper Flakes
  7. Add all canned goods + Chicken broth to the pot
    • I LOVE tomatoes so I used a can of “whole tomatoes” which means I have to cut these before I add them to the mix.
  8. Add jalapenos if you want more kick!  
  9. Taste the mix
    The flavors will be stronger as the blend together but I almost always add a little bit more of everything at this point.
  10. Set your Instapot to “Slow Cook”
    Cook it on high for 3-4 hours or on low for 6-7
  11. Add toppings of choice to serve!
